I used to cut Daikon and Pork Belly into large chunky pieces. It takes quite long time to cook until those chunky pieces get tender.   1. 400 g Daikon
  2. 400-500 g Skinless Pork Belly
  3. 1 small pieces Fresh Ginger *sliced to thin strips
  4. 1 teaspoon Sesame Oil
  5. 1 pinch Salt
  6. 1 cup Water
  7. 3 tablespoons Soy Sauce
  8. 2 tablespoons Mirin
  9. 1 tablespoons Sugar
  10. 1/2 teaspoon Dried Chilli Flakes
  11. 1 Spring Onion *finely chopped

Steps to make Simmered Daikon & Pork Belly

  1. Peel skin of Daikon using a peeler, cut in half lengthways, and slice about 2mm thickness. Also slice a Pork Belly block as thin as you can.
  2. Heat small amount of Sesame Oil in a frying pan over medium to high heat, cook Pork and add 1 pinch of Salt.
  3. When the Pork changes colour, add Daikon slices, Ginger, Water, Soy Sauce, Mirin, Sugar and Dried Chilli Flakes and bring to the boil. Then reduce the heat to medium to low, cover with lid and simmer for 15 to 20 minutes or until Daikon is soft. Stir occasionally so that all pieces are cooked evenly.
  4. When Daikon is soft, remove the lid and cook over medium to high heat until the sauce thickens.
  5. Sprinkle chopped Spring Onion over and serve with freshly cooked rice.
