  5. Last 10 seconds of sauteing onions, add Minced garlic. Transfer contents to the roast searing skillet. Stir and De-glaze with 1/2 cup white wine, or Dry sherry. Add to slow cooking vessel.
  6. Remove tomatillos from oven, put in blender until pureed. add salt and pepper to taste. Add to slow cooking vessel.
  7. add remaining chicken stock. Taste. You may like to use cilantro, not my thing, but some people like it. If re-seasoning needs to happen, now is the time, as you will not again be able to taste for a while after the roast goes in, for food safety reasons.
  8. Add Roast to cooking vessel, making sure that the liquid is high enough to cover the roast. This will need to cook at a minimum 6 hours, preferably 8.
  9. chop, tomatoes, olives, green onions. these are garnish/toppings. Anything you like with Mexican style cuisine would be acceptable, Cilantro for example would go well.
  10. serve with warm tortillas shredded cheese, toppings of choice and Lime wedge, for squeezing on, just before eating . Enjoy
